The Duo Behind Perth’s Bottomless Trend Launch New Subiaco Venue – Mimosa

Bottomless brunch might be a regular on the Perth cafe scene now, but a few years ago, you might be forgiven if you thought bottomless brunch meant taking off your pants after eating too much brekkie. (We’ve all been there.)

Team Tiisch business partners Sven Bartelt and Danielle Waller met in 2018 and quickly discovered they were both wildly passionate about food. Danielle had recently returned from 12 years in London and was shocked that bottomless brunch didn’t exist in Perth. Danielle says, “If there’s one thing people love in Perth, it’s a great brunch. And, they also love a tipple. Bottomless brunch really is a match made in heaven.” The duo launched bottomless brunch back in 2018 at flagship venue Tiisch, located in the city.

Sven says, “We knew it would be popular, we just didn’t realise how popular.” With Tiisch being the ‘go to’ for all things bottomless – their brunch, lunch and dinner sittings can at times be sold out weeks in advance. The duo knew they needed an additional venue, and when an opportunity arose recently to join forces with a quirky corner cafe in Subiaco, the team went for it.

“First step,” says Danielle, “was to add plants. Anyone who has visited Tiisch will get it,” she jokes. With a refreshed interior, new name and new menu, Mimosa was born.

Like Tiisch, you’ll find the same flair for flavour, presentation and an emphasis on locally sourced, high quality produce. “We strive to hit the mark on service every time and our ethos is simple – create beautiful food that tastes even better than it looks. And let me tell you, the dishes are bloody gorgeous. Sven is a seriously creative chef,” says Danielle.
